Pinoy Style Old Fashioned Bread Pudding

Good o'l days 

One of my childhood favorites as a look back is going to our local bread store, or commonly known as "bakery" here in the Philippines, every afternoon to buy myself few slices of freshly cooked bread pudding. 

A typical Filipino bread pudding is mainly consists of day or two old breads mixed with milk, eggs, sugar and with added vanilla or cinnamon for a twist. I can still remember the aroma of the freshly baked pudding while I wait in line along with others as this is usually sold real quick and you'll find yourself lucky if there's still a slice left.  

Now as I reminisce those good o'l childhood days, I made my own version of bread pudding from scratch which I am more than glad to share because not just only it brings back the 90's feels, it will  also help you save your almost stale.

Pinoy Style Old Fashioned Pudding 

Ingredients: 

5 cups (cubed) day old bread 
1 1/2 cups milk (i used full cream milk)
3/4 cup condensed milk (add 1/2 cup if you like it sweeter)
1/2 teaspoon baking powder
4 medium eggs (lightly beaten)
1-2 tablespoons vanilla flavor
tablespoon cinnamon (optional)



Procedure:

1. Lightly grease the baking pan (I used 6x6 square pan) and preheat your oven at 180 
degrees Celsius (356F).


2. Soak the cubed bread slices with milk for few minutes.  I used a mixture of day old Pan de Sal and slices of white loaf bread and tear the bread into cubed sizes using my hands. 

3. In a separate bowl, combine eggs, condensed milk, baking powder vanilla (and cinnamon powder).



4. Mix well and to make sure no lumps of baking powder or cinnamon power.
5. Pour the mixture over the soaked bread and mixed well.
6. Transfer to mixture to the baking pan and bake for 45 minutes, use a toothpick to check if you need to add few more minutes.

7. Allow to cool before serving. You may eat it on it's own or serve with your favorite afternoon coffee or drink.
